Corvina originates from the Veneto region in Northern Italy. This wine has been made by drying 15% of the bunches in crates before fermentation. The result is a more structured wine with intense tannins and subtle raisined fruit characters. The wine has been aged in old French oak puncheons to help smooth out the tannins and help the light red berry characters shine. Only 280 cases produced.

Notes From The Winemaker: The bud burst in 2017 came 2 weeks earlier than previous years resulting in excellent flowering and fruit setting conditions. A dry Spring/Summer led to perfect ripening conditions post veraison, therefore disease pressures were low and extremely clean fruit was harvested. Added to this was the dry summer across the eastern coastline of NSW, leaving the cool nights to help with a slow ripening period. Prior to the main harvest, 15% of the bunches were handpicked and laid out in a single layer on trays to dehydrate in a solar dehydrator until they have dried by about 33%. The remaining fruit was picked a week later then taken to the winery where it was combined with the dried fruit and fermented in open fermenters. After 14 days it was pressed to old French oak puncheons and matured in our cellar for 10 months. The wine was fined, filtered and bottled in February.
