The fruit for this wine was grown on the Marist vineyard located near Mittagong in the Southern Highlands, a cool climate region in New South Wales, at the relatively high altitude of 650 metres.
The fruit was harvested on 10th and 17th March 2018 at 12.5 Baume.
This wine is deep red in colour with cherry, spice and forest floor aromas. It is medium bodied with light red fruits on the palate complemented by earthy undertones. The wine ends with a lingering silky finish.
|Notes From The Winemaker:||The bud burst in 2017 came 2 weeks earlier than previous years resulting in excellent flowering and fruit. A dry Spring/Summer led to perfect ripening conditions post veraison, therefore disease pressures were low and excellent clean fruit was harvested. Add to this the dry summer across the eastern coastline of NSW, leaving the cool nights to help with a slow ripening period. The wine was fermented in open fermenters and hand plunged twice daily. After primary and malolactic fermentation was complete the wine was aged in a mixture of stainless steel and old French oak barrels for 10 months before blending and bottling.|
