The fruit for this wine comes from specially selected batches of Chardonnay from our “Yaraandoo” vineyard in the Southern Highlands, This wine has spent 10 days fermenting in stainless steel vats at a low temperature to retain its fresh citrus characters. It is bottle fermented and aged on lees for 36 months which gives it distinctive yeast complexity to complement the rich fruit characters backed with palate cleansing acidity. It was tiraged in October 2017.
|Notes From The Winemaker:||The fruit was hand harvested on 7th March 2012 at 11.5 baume and fermented separately before carefully being blended into our 2012 cute. Warm temperatures through late Spring and early Summer resulted in an excellent flowering and fruit set. A drier than usual Spring/Summer led to perfect ripening conditions post veraison, therefore disease pressures were low and excellent clean fruit was harvested. The winter rains from 2011 ensured a healthy crop load with intense varietal character but with moderate acidity.|
