Our Pinot Noir has vibrant aromas of red and black cherries. On the palate it is a complex array of red fruits and spice provided from its time in French oak barrels. Fine tannins and acidity provide length on the finish.
|Notes From The Winemaker:||The environment in Tasmania is blessed with pristine water, clean air and rich, ancient soils. The climate is cool and dry which are ideal conditions for growing premium cool climate grapes. Our wines are produced with a focus on sustainable viticulture and minimal intervention in our winemaking. The season began with higher than average rainfall in winter and spring prompting faster than usual growth, although temperatures remained a bit below average. As summer arrived the rain disappeared, but temperatures were still cooler than average. The very dry period from summer through to mid-autumn required vigilance in managing irrigation. Yields were moderate overall, but all the indications promise high quality across all varieties. This fruit was harvested in the coolness of the early morning before undergoing ferment on skins in stainless steel open fermenters with varying ratios of whole bunches included. The wine was hand plunged twice daily to gently build colour and structure. The pressed was pressed into many coopers and sizes of French oak. Maturation was for 10 months before blending and bottling.|
