Grown in the mineral rich soils of the Hilltops region nestled on Australia’s Great Dividing range at elevations over and above 1699 ft. This wine is bright red purple in colour and has lifted aromas of plums and cherries, with subtle pepper and toasty oak. The palate is medium to full bodied with intense red fruit characters with hints of black pepper and French oak. Fine tannins round out the palate with a lingering finish.
|Notes From The Winemaker:||The warm conditions were present for majority of the growing season meaning that fruit reached maturity with minimal disease pressure.Although warm, the season was mostly dry with some minimal rain events occurring in early February. This resulted in no disease issues present allowing ideal picking conditions and pristine fruit being delivered to the winery at its optimum maturity and maximum flavour level. The fruit was machine harvested from two premium vineyards in Gundagai and Hilltops, winemaking was kept consistent from both regions. Shiraz parcels were fermented separately in open top fermenters and gently pumped over four times daily for a period of six days to maximise colour extraction while maintaing a soft tannin profile. Once fermentation was complete the must was then pressed off skins and the wine racked into a mixture of old French oak and allowed to mature for a period of ten months. Selected parcels of Hilltops and Gundagai Shiraz were then pumped out of oak and blended, a light fining was performed to remove any harsh phenolics prior to bottling.|
