Notes From The Winemaker: | A drier than normal winter in 2018 meant budburst happened a week earlier than usual. It was an extremely dry growing season which resulted in a lower yield but the smaller bunches had increased flavour concentration which is seen in the wines of this vintage. The Hilltops region is blessed with mostly drier and warmer days with some cooling relief at night due to its continental position. This fruit was harvested in the coolness of the early morning before undergoing a long cool ferment in stainless steel tanks. After fermenting and filtering the wine then underwent the martinotti process to give the wine its bubbles. |
